These are one of my favorite snacks! They are a great substitute for chips. I love chips; but I know that they don’t provide any type of nourishment and are just overall unhealthy. So when I am having a chip craving I turn to these delicious kale chips. I also love making them with the kale from my garden which is easy to grow and loves cooler temperatures so it can be started in early spring and will grow until late fall.
3/4 cup of cashews (soaked for a few hours)
1/2 red pepper
1-3 cloves of garlic (depends how much you love garlic!)
1 Tbsp of Tamari
2 Tbsp Olive Oil
1/3 cup of nutritional yeast
1 Lemon juiced
1-1/2 bunch of kale, ripped into smaller pieces
Put all ingredients in food processor, blend until smooth. Then spread on kale. I usually put about 1/2 cup of kaleat a time in a large measuring cup (8 cups), take a spatula, scoop out the spread and then mix it with the kale so it is covering every piece. Then I spread it out on the trays of the dehydrator or oven sheet. For the dehydrator I usually put it on 120F, after a few hours I rotate the trays. It takes about 4 or 5 hours to become crispy. For the oven I would go with the lowest temperature you can and check it every 10-15 mins. I usually don’t use the oven for this but it does work fine.
